Winter is finally coming to an end, which for many means a rush to get back on the healthy food wagon. Try this stir fry for a delicious, guilt-free meal.

Broccolini and Chicken Stir Fry

[Yield: 2 servings]


200g trimmed broccolini
1 chicken breast, diced
15g ginger, shredded
2 garlic cloves, minced
1 red onion, sliced
1 red pepper, sliced
2 tsp nut oil
1 tsp mild chilli powder
1 tbsp reduced-salt soy sauce 1 tbsp honey


Boil broccolini, then shock with ice water and set aside. Heat the olive oil in a non-stick wok and stir-fry the ginger, garlic and onion for 2 mins, before adding the mild chilli powder. Stir briefly.

Add the chicken and stir-fry for 2 mins more. Tip the broccolini into the wok with the soy, honey, red pepper, and 4 tbsp boiling water then cook until heated through.

Serve immediately. You can serve this stir fry on it’s own, or with rice or noodles for a more filling meal. Be sure to cook your rice in advance!

For a fancier look and more complex flavor, add 1 tbsp sesame seeds along with the chilli powder.

You can use any vegetables or protein you like in this stir fry, as it’s a basic format that is very forgiving. Just make sure to use the same measurements so that you end up with the same amount and balance of flavor. Here are some combinations we like with this recipe:

  • Mange tout, squash and beef.
  • Carrots, spinach and pork
  • Cabbage, shallot and chicken.
